A standing still, smokey burnout requires use of the front brake and a prodigious amount of throttle before and after a quick clutch engagement. First gear works fine and probably best without a waterbox.
Practice your wheelie from a rolling start first. Every bike is different and requires a certain posture and throttle modulation. Get rolling in first and let out the clutch while throttling it up, repeat until you get the feel for it.
Remember all these things eventually will damage your bike and you, so use in moderation.
Here is a good wheelie I had:

I agree with the rolling burnout first, make sure you're heading straight and are well balanced otherwise the rear of the bike will swing to one side.
My first wheelie I was rolling in 1st gear around 3500-4000rpm and just opened the throttle wide open while shifting my weight backward, just make sure you can control the throttle and have your foot ready on the rear brake incase you go up an too much of an angle, this will help you from flipping the bike or dragging the rear fender.
Be careful and if you hadn't been riding long I don't suggest trying this, or go out in the dirt and practice on a dirt bike, its way easier (and less painful haha) to learn that way.

Out in front of the house when I'm just playing around, I'll use first gear but at the track, I will use 3rd gear for the burn-out. Gets the tire spinning faster and I don't have to use such high rpm to get desired results. If you want to use 2nd gear, use water to help break tire loose so it doesn't shock the gear too much. This is one of those deals where very little water goes a long, long ways. Just enough to get tire spinning as it WILL make the tire slippery and harder to control, needless to say. 2nd or 3rd gear will be easier to control though. Also, be sure to let off gas if you think tire is starting to hook otherwise you may get to practice those wheelies before you are ready!
