Im from Canada,Quebec.. and I tried 1mm shim, 0,5 shim.. and with 0.5mm he goes better a bit.. I called my Dynoshop to tune my bike correctly and he doesn’t want to waste his time and my money on CV carbs!!! He said without original air box, the Kz will never runs good.. even if he drill the slide to compensate the air velocity from Pods! That’s why I want mechanical carbs!! I put so many time and money in this bike to let him run like that!! All is brand new except the carbs haha

Carburetors don't get "tired". There is a possibility of damage inside, though. Torn slide diaphragms, for example.
In order to convert to VM carbs you will need the following: a set of VM26's, new intake boots to match the carbs, new pod filters to match the VM's, and of course, all new jetting, possibly including some air correction jets from Zed. VM carbs are typically easier to jet than CV carbs, but you can expect some measure of trial and error needed. Adjusting the needles is a pain with VM's too, so be ready for that. And the throttle cable hook up? I'm not sure the stock cable will just hook up, so you may have a project there.
Regarding cost, VM26 cores are pretty expensive these days. The cheapest decent set I see on eBay is $300. Then you have to rebuild them, so figure on another $100 for parts. Pods are $100 (APE). Carb boots are not cheap, if you get the good OEM parts. China boots are available, though, but the quality may be questionable. And then jets. Cost?
A Dynojet kit for your CV34's is downright cheap in comparison...

For availability, VM24 carburetors from a KZ650 are an option. elr658 on a different site went this route on his 750-Ltd. He was fairly knowledgeable & probably knew as much about old Kawasakis as anybody.

Thank you very much, I tried dynojet with my CV, and it runs better with 135 keihin jet and shim on my needles?!!!! It looks like too rich or too lean with their jet kit.. maybe my diaphragm rubber are tired like I said before?!! Cannot get any rubber anywhere, only Mikuni os available… a lot of pain with my CV carbs. So I think that Im ready to conver VM carb and go on the Dyno. A beautiful old bike like this.. I cannot let him runs like that for the next summer!! I don’t have any idea

I already check for VM boots and Throttle cable from kz 1000.. I would like to have VM28 instead of 26mm of course.. but if I can only get the 26mm I will not let them go!!!

maybe my diaphragm rubber are tired
I think the word you're looking for is bad. ha ha. Remove the carburetor tops & take a look at them. JBM Industries may have replacement diaphragms.
