Z1 Enterprises has the whole rebulid kit here for $24 each carb. Has gaskets, needle and seat, which could cause leaking from either spot, plus all jets.

Unless there is major physical damage to the carbs they should be able to be rebuilt. I strongly advise against purchasing aftermarket carb kits though. Simply clean the carbs with carb dip and replace the soft parts like gaskets and O-rings.
If this is beyond your capability there are guys around that do that sort of work for reasonable prices. PM me if you need a contact. I could even do them, again, assuming there is no serious physical damage to the carbs.
How about posting up some photos of the carbs and a better explanation why your mechanic doesn't do the work himself?

if I had someone go thru them completely and replace what might be needed if would feel better for sure...last mechanic didn't have what I would call the expertise for a vintage bike and didn't want to do the search for the parts.
so if anyone can recommend someone that is really good at the old stuff I would appreciate it. Even though its not my daily rider I love this bike!

This is why you should do the work yourself. Cleaning carburetors & replacing gaskets is not that hard. I'd never done carb work before, but it was easy & I do mean easy. most stuff only goes back together one way & each carb is virtually the same as the other, so it's kinda hard to mess up. My bike is a 4-cyl, so doing a Twin should be extra easy. If the airbox ducts are hard, that could be the first problem to deal with, especially if they are NLA....last mechanic didn't have what I would call the expertise for a vintage bike and didn't want to do the search for the parts.
Visit the carb diagram at Partzilla for your bike and identify all of the gaskets, o-rings & rubber parts, then see what's are available at Z1Enterprises.com or etc. Sign in at partzilla: if they show a photo of a part, then they or the Kawasaki dealer or Z1Ent should have it. or can get it.

setting it correctly after the install I guess Is what I need to read up on. I have been reading more forums in here on this and seems they use clear fuel lines to measure volume and pressure?

Thanks guys! Im going to do this myself and learn from it. ANY TIPS are appreciated. I have access to an ionize cleaner so all I need are the correct parts and time to get everything set correctly.

Good screwdrivers. JIS for the cross-slot screws (they are not Phillips) and proper hollow ground flat blades that snugly fit the slots in the jets.
A carburetor synchronizing setup. The Morgan Carbtune seems to be highly favored these days, though a high quality set of vacuum guages designed for this purpose will also get the job done.
A bucket of carb cleaner with a small parts basket. I am partial to Berryman's Chemtool.
A genuine Kawasaki Factory Service manual for the exact year and model bike you have.
