What's wrong with the ones you have?

You can probably use the carburetors from any KZ1100 or 81-on KZ1000, including the 82-2005 1000P police bikes.
(but not the 81 1000C police). You'd probably have to rejet the 1000 carbs.

Would I have to jet to lean or rich? I want to to to be as fast as possible since it now looks more like a sport bike and not a cruiser

Any Mikuni BS34s will replace the originals, I bought a set for £140 including postage, but to get it running you could use BS32s, you can get them for less than 34s.

Will the brackets that hold the 4 carbs together always be the same as long as there bs34 or there are specific to the engine. i want to make sure if I buy them and they line up correctly to the boots

They would be engine specific, but for the Z1100 you could use any J type Z1000 carbs, the 1100 has exactly the same head as the Z1000J, Z1000R or Z1000P models, the carbs are jetted differently but not massively different.

Note size limitations.
Resize the pic if necessary before including it in the message to be submitted.
Various resizing applications are available, such as MSPaint.
Good Fortune!
