When I replace these do I put some kind of liquid gasket on then? The old ones have some kind of goop on them.

High temperature silicone to seal. I use "The Right Stuff" by 1 minute gasket.

I put them on dry and they don't leak. Ed

I ride in 110 degree weather and don't want the boots warping or shrinking, so I put the silicone on as added insurance.

I don't like RTV or silicon sealer which I guess is the same thing. Most gaskets seal fine without aid of this stuff and the intakes don't need it. Factory didn't use a sealer, so what you got there is added by someone.

321,000 miles on KZ's that I can remember. Not going to see any more.

Since the engine gets so hot, wouldn't the ambient temperature be irrelevant in regards to the carb holders?

+1 good posting. New manifolds go on dry. USe no sealer on them. DO NOT use silicon on anything pertaining to the fuel system. Sorry MTB, it's just not a good idea.
The reason your manifolds have the sealer on them is because they are old, and cracked, and warped. They were leaking. It appears to be Three Bond on them, which is not RTV silicon, and will work in this application. Although it is a temporary fix.
New manifolds are soft and pliable. They seal without the aid of sealers.

The engine runs hotter when it's that hot. When I rode to Cabo in the middle of July last year, the bike ran like crap until I sealed up the boots because they warped or cracked;115 in the middle of the day, absolutely miserable.

The Right Stuff is as chemically resistant as a silicone based compound can get. If it's applied, however, wait a full 24 hours to make sure that everything is cured.

I'm working off of my phone, where are you located Frances? You likely don't need to use sealer, especially if you aren't riding in temperature.
