Any secret tips or tricks on the tools and polishes? I know they are not going to come out sparkling but I'd like to bring some life back into these VM24's

If you plan on going Total disassemble, then maybe look at these cleaners. They will do a nice job, clean but not Polished.

I am doing a total rebuild and have them completely disassembled right now. The carb bodies are very very clean right now but they have lost a lot of the original luster, especially on the carb tops and bowls. Will an ultrasonic cleaner do this? I was thinking of a more traditional buffing, but I really have no idea.

Well no most likely not.
But these other kits they sell, if you have a Dremel, would do it. Brasso is a inexpensive metal polish compund. Then with these wheels, and a Dremel, it would be nice quickly.

A vibrating tumbler would be great. With the correct media, there would be no residue at all left behind and you can go out to dinner with your favorite babe while the polisher does all the hard work.

the tops and bowls can be polished to look almost like chrome...even with just clean bodies, the combo can look really good and very presentable......
