None of the above. ;)

You need to head south (on the bottom of the carbs, I think the front side of the bowls).

The two you have circled connected to the question mark are the mixture screws. That type is an "air-screw". It controls the amount of air in the idle mixture. Turning it out allows more aire making it leaner. Turning it in allows less air making it richer.

The third one, to the right, is a very fine adjustment for the throttle position. It is used to make all four carbs have the same throttle position.

Yeah, I also just checked Kawasaki.com, and the side air-screw type is on the '79-'80 diagram. The 78 diagram (KZ1000 A2 and A2A) show it underneath near the engine side. Those would be true mixture screws which contol the amount of air AND fuel for the idle circuit.
The 1000 D shows the side air-screws.

I'm sure WG has the details of what type goes on what bike.

Love2ride, you may want to be more specific with the exact model and letter designation on your bike in the signature. There are a few different 1000's in 1978. :)

Being air screw type located on the sides. They are adjusted as usual. Turn in til they are gently seated and then turn out so many turns.

29mm carbs
K&N pods
V&H system

Im thinking 2 ad half to start, maybe three turns out.

I can't say how many turns. You'll need a manual or maybe WG knows. On my 550's they are all supposed to be less than two turns.

The two closely located screws under the carb top covers are for adjusting height of the throttle slide, which is used when syncing the carbs.

I believe th left pictured screw/nut is the adjusting screw with locknut, and the other serves to lock down the adjustment. :)
