You will not notice a huge difference in HP's and very little to do to re-jet your carbs.
Regardless of HP the 75 definitely has a tendancy to speed wobble between 65-85 MPH so a small mod to the frame is reccommended if you can find someone who still does framework on old zeds.
Not sure about the cams, my Z1 has 'Z2' cams and my ELR is running 'Z4' cams. The 'Z2' cams are considered 'hot street' and the 'Z4' are nuts requiring tons of head work. The Z2 were almost but not quite drop in. I expect the Z3 with higher lift would require more head work and you would need to inquire as to the reputation of the 'professional' builder as to how well it was built and documented.
Check around when it comes to changing sprockets out on the old 75. I tried every combination I could get years ago but ended up with stock sizes in the end for the track. So my red line is still 135mph in fifth gear.
I think it boils down to what you have in mind for your bike. If you intend to keep it street then if everything is set up well you'll get a lot of milage on a fresh motor.

But its quite easy to make a big difference.
Taper bearings on the head stock, maybe some better front springs. Get the frame braced under the tank, across the front down tubes, and across the back tubes near the swing arm. Fit a box section swing arm on taper rollers or at least put a needle roller kit on the stock arm and put some better shocks on.
If its still got one disc on the front fit another!

3X: Lift .418 Duration 282 degrees
8X (APE 410) Lift 410 Duration 266
5X (APE 435) Lift 435 Duration 266
I don't think I'd call cams with 282 degrees duration good street cams in a 1075.
But what do I know, I'm a 750 guy
But I sure wish I could find someone with an old Andrews catalog so they could give me some info on the 750 Andrews cams I have

The 1075 is a good engine still using the 903 sleeve size even though it's Wiseco. The next bore size starts around 1100 just FYI if you ever intend putting your bike on the track.
Sorry 1075will "not" work in 903 sleeves but will in a stock 1000 block 1015 is the most you can go in a stock 900 block
