Loving the project.

Your rear sets look very similar to the 2004 GSXR600 ones I used:

Yes, I'm pretty sure they were off a GSXR of some sort, I grabbed the originally because they had symmetrical mounting brackets, I've had them for so long I can't remember where I got them...

A little more progress. steering stem just needs to be welded now, My mate is pretty handy with a tig so we'll put the stem back in the lathe to keep it centred and finish welding it up.

I'm till trying to get everything to fit on the frame, not quite there yet , getting close though, lots of fiddling around, the hardest part is making the GPZ seat pan fit the Z1000 tail piece.
I'll fit the front tank mounts next week and hopefully finish up the body work...

Its hard to get a good profile shot of the bike because of lack of room but , the tail will be sitting more forward than it would on a MKII 1000 giving the bike a nicer stance, I can't wait to get it finished...!

Ok, trying to work out whats the best gasket set to buy for the engine, reading forum experiences for hours and searching has just about done my head in, and I can't find OEM anywhere. Would anyone have some good advice on gaskets please ?

This motorcycle was branded as KZ750 for other markets. I have a scan of the original parts list for it. Found it around 15 years ago on the net.

I am voting for OEM gaskets for cylinder head, cylinder base, oil pan and transmission cover.

11004-1024 is part number for cylinder head gasket. The latest update for it is 11004-1268

11009-1154 is part number for cylinder base gasket. The latest update for it is 11060-1726. It's a metal gasket which also fits Zephyr 750.

It also may happen that Zephyr 750 cylinder head gasket (also metal) may fit your GPZ/KZ750

Thanks Gazzz, I wasn't thinking Zephyr, ZR7 probably would fit as well....

I forgot to mention, i need one for the 810 kit, 69mm bore...

Inner diameter of the rings of the OEM KZ750 gasket is 67mm, so it seems that the OEM gasket will not fit the Wiseco kit. I could assume that the diameter of the bore of Zephyr 750 gasket will be the same.  However, with some luck the gasket that comes with the 810 kit may be decent. Gasket that I received with the Wiseco kit for KZ650 was garbage, but the one that some years ago I received with 810 kit for my Zephyr 750 was decent. After years and 70K km I still have no issues with it.

Does anyone know if there is an MLS head gasket for the GPZ750 engine ? I can't seem to find one anywhere.   They are thinner than the Graphite gasket . The graphite gasket is  .043, the MLS are usually around .030..

Look into 11004-1342. A post on here claimed that ZR7 head gaskets are MLS, I'm not sure though - photos seem to show that they're multi-layered something.

Thanks Ghost, I'll look into that, I'm chasing as much compression as I can get, Thinner head gaskets help. Every little bit counts right...
