I am starting work on the 1000 J motor for my KZ 1000 project. Would Del West valves be ok or do I need to step up to Manley? It will be a 1075 with stock cams. The carbs are 34mm smoothbore. Open to suggestions, thanks , Cody

Never used Del West valves but looking on their site they seem to be up to the job.

I am not sure if Del West do replacement sizes for Kawasaki but I know Manley does. I used Manley SS replacement valves on my '74 Z1 head, at 32mm they are meant for a later head, I cut them down to 31mm to fit my valve seats.
My intake valves were supplied by the guy who did my valve/port work, I think they were KW SS 37mm. Manley has been providing Kawasaki listing since before 1985.
There are lots of used 7mm Del West valves on Ebay that could be cut down and used for Kawasaki heads. Seem to be pretty cheap as well, used stock car parts

valves = 22 € Intake, 31 € exhaust.
