gpz1100 not wanting to turn over fast when hot

As an easy diagnostic, maybe get it hot then use some decent jump leads from a charged car battery : +ve straight to the starter terminal, -ve grounded to the engine on an unpainted part. If your problem disappears temporarily then clean/replace battery leads on both sides and the starter solenoid.

Heat seizure making the motor tight is another less likely possibility.

Are your carbs badly out of balance?

Carbs were synced for me right before the bike shipped.

If it is the timing it's an easy fix. Covers and tensioner off, get it TDC and lift the chain from the sprockets. You need to count exactly 43 links (43 I think) from head surface to head surface. This is the crucial part, if this is wrong by one link you'll get your symptoms. If your chain doesn't lift from the sprockets just remove the cam caps.
