I have found a few posts about mounting VM26's on a 750, but nothing with all the necessary steps/parts listed. I'm getting a bit sick of fiddling around with CV carbs and have a set of 26's on the shelf.
I thought I'd try and get some basic info here and post some pics and part numbers as I put them onto my 750.
As far as I can tell I need to get some 900/1000 carb boots for the head and just machine the mounting holes so they fit. From what I've read the spacing between the cylinders should be the same.
For the air box side I figured I'd get some 650 boots, but I'm not sure if they'll fit over the 26's. Can anybody tell me if the carb intake ports are the same size on the 24's and 26's?

Correct on the engine side for fitting VM26 carbs on a 650/750 head, the mount holes on the rubber manifolds need to be slotted. I used a 1/4" round file as it does not take that much (just a few mm off) to get it done.
The air box side on a VM24 is 40mm, on the VM26 its 43mm. When I did my conversion to fit VM26's on a KZ650 head I used 900 rubber ducts to fit the air box and enlarged the holes on the 650 air box to fit them. With your CV air box you have much bigger holes so you will need some kind of back plate with smaller holes in it, unless you can easily find a 650 air box.
