I am new to bikes myself and I felt the same way about taking the carbs apart . After doing it the first time, I found it to be an easy job to to take them apart and clean them up. The hardest part is getting them back on the bike. I have had to do this a couple of times due to my bike dropping a cylinder and can do it in about 1/2 hour now. (fuel filter is your friend ;) )

That's a good point about removing/installing them being the hardest part. My tip is to unbolt the battery try and allow it to drop down and slide backwards as far as you can. That will allow enough movement of the airbox that you should be able to slide the carbs out the side of the bike fairly easily.
