When rebuilding old carbs I endeavor to reuse as many of the factory parts as possible. Take the carbs fully apart and soak everything in carb dip then inspect for wear.
cycleorings.com sells an O-ring kit and you can get new float bowl gaskets from Z1 Enterprises. If your float seats and needles are worn you can get new Mikuni brand parts from Amazon. One thing to be mindful of when rebuilding those carbs is cracks in the fuel Tee rubber. Z1 sells replacements but the O-rings are a poor fit. I've found the O-rings from a Harbor Freight metric kit to have the right size or maybe the cycleorings kit has the proper size too (not sure.)

From my experience all of the kit rebuilders have deficiencies but I believe Keyster makes the best quality and most comprehensive rebuild kits.
I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

+1 on OEM parts and the O-rings kit.

I did buy Keyster kits for my VM26 and they are very complete but pricey.

Yes, and you get a lot of stuff you don't really need. I think they have the best gaskets, and they provide needle jets, which most other suppliers don't provide. But I don't need three pilots, six main jets nor four different needles. And I find their choke plungers are less than ideal...wish they had the little point on the bottom like OEM. Also wish they would supply new choke rubber seals.

I can refurb the original plungers if anyone needs them doing.
I've custom built the tooling to make and insert full size ethanol resistant VITON seals in the original plungers without disturbing the rolled securing edge.
I can do all the VM series 4 cyl carb banks.
I have a listing on ebay offering the service worldwide but can do it cheaper if contacted direct.
AIR CORRECTOR JETS FOR VM CARBS AND ETHANOL RESISTANT VITON CHOKE PLUNGER SEAL REPLACMENT FOR ALL CLASSIC AND MODERN MOTORCYCLE CARBURETTORS
