81 gpz550 Jets with Pod Filters?

Hi all!
I'm buying a GPZ550 this weekend and I'm super excited. The only problem is that one of the carbs stick and they need a rebuild. They have pod filters and the PO taped around them to reduce airflow because he is sing stock jet size. I found a rebuild kit for 40 bucks on Amazon but my problem is I want to increase the jet size so my friend can tune it properly. I have no clue about buying jets and this is my first bike. I am well versed in cars because I am a tech for Toyota and I constantly play with older carburated cars. But I am new to this and need a bit of a rundown. I have read countless threads and have learned a lot from those.
Basically this what I need to know.
Specs for the rebuild (float level, etc)
A decent kit for the carbs
Jet sizes to use running pod filters
Would it be better to use stock jets and tape the filters like the PO
Any info helps but people who actually have done it I will be especially grateful for

You should be able to find he fuel level (not float height) and some other important stuff at this link.
