Are keyster rebuild kits the best one to use for a 1977 kz1000 stock bike except for 1075 kit ?

I use only Keyster kits in all my bikes. They have everything you need to bring the carbs back to stock, plus they have extra jets and needles to fiddle with the carbs if you've overbored or changed out your air intake or exhaust.
I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

I never use "rebuild kits" unless there is wholesale damage to the stock jets. I'll take a stock Mikuni jet over any aftermarket jet unless the originals are damaged or seriously worn in some way.

Some parts are available. Most are not. That's why I buy Keyster.

If your carbs are the ones on the A1 then you can find out which OEM parts you can still buy here.

I know the Mikuni VM carb bodies etc. are different, but are the Mikuni VM jets, needles, etc. for the carbs shown in the link below the same as those of the KZ Mikuni VM carbs? Ed

Mikuni makes parts with the same description but with different series numbers. If you know the series number then you would be OK. The series number is often written on the carb part.

Example, 1975 VM28SC carbs take an O-8 needle jet from series 243. The 1980 VM28SS carbs take an O-4 needle jet from series 259. I doubt that an O-8 jet from series 259 would be the same as one from series 243.
