KZ 1327 big bore jetting

Long time lurker, first time poster. I'm working on a kz1100 build with my brother and dad and need a little guidence. We are putting an MTC 1327 big block 10:1 compression, stage 2 ported J head (from Pitstop Performance), 4 into 1 exhaust, K435 cams, and Mikuni RS36 Flatslides.
Collectively building it isnt an issue, but I have no clue where to start on carb jetting. Does anyone have suggestions/experience?

Well there isn't much for pictures since it's completely torn down.
I saw the Mikuni tuning guide since that was the first thing I searched for. But since the engine will be so far from stock I didn't think the guide would be accurate. I know I need to go up on all jet sizes and I'd rather run a little rich vs a little lean.
Any way, here is the lone pic so far. Ignore the bars welded to the seat, this was a garage sale find.
