I have a 1981 kz440 and was wondering if it should have two pipes connecting from back of air filter to the carbs, or just the void that is the air box?

Picture would be handy, but sounds like breather tubes from carbs to air filter which is normal practice.

Supposed to be two air intake hoses connecting the carbs to the air box.

If you mean the number 14073 in the diagram, then yes, you need a pair. The carb overflow hoses should be draped over the trans case and vented to atmosphere just in front of the rear tire.
