Float height should be whatever results in correct fuel level as evidenced by the clear tube test (typically about 3 mm below the carb float bowl gasket).
Good Fortune!

Patton is correct but to get you in the ball park try 21 MM from the base of the carb body to the bottom of the float as a starting point. I try to rotate the carbs so the float just contacts the needle for my measurement. Hint that will NOT be with the carb turned upside down, But rather an angle approaching full upside down. Also make sure the needle plunger is free moving and spring loaded part works prior to setting carb float. Then assemble the float bowls and check with clear tube. .
Don't fix it until it's broken.

Before trying to adjust the floats, you should do the service fuel level check to make sure you actually need to mess with them.
Usually, the fuel level should be 3.0mm +/- 1.0mm below the bottom edge of the carburetor body. pg 312 of the chain drive pdf.
Manual. search eebbaayy for KZ750 shaft manual. get one thru at least 1984. there are several listed & one is pretty cheap.
Kawasaki manuals have a model application chart on the back cover, so make sure yours in on the list.
In the mean time you can probably use the chain drive manual as a basic carburetor guide.
750turbo.com --- Index. 1980-84 750-4 & KZ700. 1983-85 ZX750. pdf manual link near the bottom of the list.
yellow/gold cover w color wiring diagrams. get the one listed as ->> GPz750 Base Manual.pdf. good scans.
The one that says full english is a cruddy, photo-copied version. all files except the last one should be pdfs (not exe).
