1978 KZ650 b-2
700cc Wiseco kit 10 to 1.
1980 KZ750 cam, ape springs, stock clutch/ Barnett springs.
Vance and Hines Header w/ comp baffle and Ape pods, Dyna S and green coils, copper wires.
29MM smooth bores W/ 17.5 pilots, 0-6s and 117.5 main
16/42 gearing X ring chain and alum rear JT sprocket.

This reminds me of two friends I have from long ago ..... one had a 150 Honda dream with a single carb...... the other a 160 dual carb....... we all wanted the 160 since it had those few extra HP....... I under stand where your coming from seems like it would easier keeping the single carb sync'd and taken care of but don't think you'd ever get it any where as good as the factory dual set up.

Unless it's a performance upgrade, I see no reason to do it.
