I'm trying to understand the service manual at the chapter about the pilot system. It states (in factory settings table):
2 turns out
U (---)
(The U is inside a circle)
What does the parts after two turns out mean??

I don't have it in front of me now, so I am flying Weak Memory Airlines.
Some of the settings and specifications vary from country to country, so Kawasaki developed a shorthand way to indicate the differences to avoid writing another sentence for each market's oddities. I believe what you are seeing is a cryptic way of saying that the U.S. EPA has decreed that low speed mixture be preset at the factory and any owner who fudges with it will become everybody's favorite date at the local prison.
In other words, in the U.S., it is not to be adjusted.

If you're using the pdf manual, then a notation about U = US models at the bottom of the carb spec page may have been lopped off when the manual was copied or scanned. A number of pages of that pdf are poorly scanned.

There is a notation about it in the model specification section, pg 7 --- U : US model (pdf pg 10).
The 81 KZ650 manual has the notation directly below the carb jetting table.
