The bike stars right up and will idle good for a little bit, then I rev it up and it hangs at high idle. After that I adjust the idle screw down, then it starts to misfire and then slowly dies. Im stuck, and I want to ride

Check cables and linkage first to make sure something isn't hanging up.

Plummen's advice is excellent. A sure fire way to make sure it isn't the cables is to unhook them at the carbs. If idle still hangs check carb holders for leaks. Let us know if you need instructions - it's pretty easy to do. Ed

Cables are good, checked vaccum leaks with wd40 and carb and choke cleaner. Could it be the coils, float needle, or valve shim? Because I do have a tap on the left side. My carbs are clean and stock.

Did you physically look inside carbs and see the slides move up/down? Is the choke off?
If you have a vacuam leak causing it ,it should idle really high from when you start it.Your valve ticking is a separate issue,Coils are unrelated to this problem

Is the bike at hand a twin or a 4-cylinder?

Sounds like fuel is limited at idle / low rpm / low compression. Check fuel hose for kinks. Make sure there is at least 2 gallons of fuel in the tank. Petcock at RUN position. Otherwise, pull the petcock and clean/inspect. If the petcock has a vacuum line, make sure that is also working. Check air filter / air box.
Second round: spark plugs, spark plug wire connections, points (if your bike has them), timing, timing advance mechanism.
Third round: clear tube test, carb sync, valve clearences/adjustments
... just my 79 cents
