Edit #2: the service manual for the 750-4 chain drIve models lists it as 2 turns out for the Canadian models, but there is no specification for the US models (denoted by a U).

If your air screws have plugs over them, there may not be a factory setting specified in the manual.
The chain drive manual says to turn in the air screws until they just seat, counting the number of turns in, then reset them the same number of turns out from seated.
Do not over-tighten them as the tips can break. I would count the number of turns in on each one.

Correct me if I am wrong, but did not the 82 KZ750 N1 use CV type carbs. If so then the adjustment screw would be a pilot screw and not an air screw.

yes you are correct it is called a pilot screw... from the factory it was capped off but the previous owner removed the cap and adjusted it

Calling them air mixture screws is kinda generally accepted, I guess. :)

Yup, pilot screws. I'd go 2 turn at minimum. These bikes came adjusted lean from the factory.

How much would be a maximum number of turns out?

My M1's carbs were obviously tampered with, as the caps were gone, but the screws were at a whopping 4.5 turns out!
Methinks I need new jets, but am clueless as to divine how large to go! (stock was 45, I believe).

Pilot circuits likely need a proper cleaning, with special attention to the orifices where mixture from the pilot circuit enters the carb bore.

Existing jets may be okay.

While I've got this thread successfully hijacked ;) , these carbs came without rubber plugs over the pilots. I've noted that SOME of the BS' actually came without, is this correct, or should I get replacement rubber plugs?

Yes, later versions came without the plug, where the tiny passageway into the pilot jet was eliminated in favor of direct feed (uncapped pilot).
