Within the Realm of Possibility: KIt for converting a vacuum petcock to a manual fuel valve.
Here's something I just stumbled across. This conversion kit might work on some KZ models as the Concours has the same diaphragm cover assy & tap lever o-ring. It looks kinda nifty, but I have no idea how adaptable it would be to other bikes. The ZG1000 petcock body may be machined differently. If it doesn't work, it may give someone an idea for coming up with something for the KZs.

Not for sixty five bucks! I think I used maybe ten or fifteen cents worth of glue on mine, got the same result.

vacuum petcocks. The problem I had with my Zephyr and which was the problem which lead to an untimely string of events that resulted in my broken knee. I always wanted to bypass this system to return to manual petcock but was told it wasn't practical. Oh well, water under the bridge. I will take a manual petcock any day over a faulty garbage vacuum advance.

And there is now on, off, & res? Some guys probably wouldn't want to depend upon a glob of glue. hee.
I fiddled w the vac device on my 81 650-CSR, and I think if the lever & cover are installed 180o, it will function as a manual fuel valve w the 3 settings. The downside is that the lever would have to be cut, as the end will contact the tank, and the functionality won't match what's on the lever cover plate.
