Once you've had a bike with allen head screws on the carb bowls you will never go back to the JIS stockers.

Eventually, you will trim some screwdrivers to length so you can drop the bowls and get the floats off without removing the carbs.

I don't trust EFI components to age well. Electronic components that WILL go bad eventually and someday wont be available. Then what? Can you make new sensors and computer chips in your garage? I wonder if 70-80 years from now all the EFI stuff built from the late 80's/early 90's and on will be dead but earlier carb/points stuff will still be running and restored by collectors?
