I guess you mean the float height? For the chain drive models it's 18.6mm.
A more accurate measurement is to do the Service Fuel Level check using a gauge to check the actual fuel level (clear tubing method). For the chain drive models, it's 3.0mm +/- 1mm below the carburetor body.

I bet it's the same. The more accurate measurement is the Service Fuel Level check for check the fuel level in the carburetors. Sometimes the float measurement doesn't translate into a correct fuel level.

Genuine Kawasaki Factory Service Manual.
Search ebbaayy for KZ750 Shaft Manual. There are usually quite a few listed & one or two for relatively cheap.

So if the fuel level doesn't match I need to adjust the float hight hight or lower? Also could having the wrong float hight cause the bike to rev high to red line?

I have a shaft manual for the 83 KZ750F. I wish I could scan and post the page, it seems to have two measurements.

The Service fuel level says 0.5 +- 1mm. It doesn't say where it's measured from, but probably from the mating surface of the bowl and body.

The Float height measurement says 14 mm.The float height is measured from the Float bowl mating surface on the carburetor body, and you measure to the center of the float's bottom flat surface.

In my opinion, you do not depress the float while measuring this, let it set on the valve by it's own weight. The manual does not say this, just from my experience.

I would set them at 14mm. This will allow more fuel in the bowl. I don't know if this will help it run cooler.

What are the jets in the carbs? My book says main jet is 100, needle jet is N426-O1B36, jet needle is N10C, pilot jet is #35, Main air jet is #60
