Carb Overflow hoses are off of the Bottom of the Fuel Bowls. They are there to make the Gas drain down to the ground with out hitting a Hot engine.
If your talking about something else, post pictures. Are you talking Vacuum lines, or Fuel Feed hoses?
Overflow is easy, each bowl gets one hose, going over the backside of the motor near the swing arm. Tie them together with a Zip Tie, and then there is a small tab/ bracket to route them through. Hang them down a few inches below the motor.

I have 3 hoses on the fuel rail, 1 goes to the gas tank, and I don't know how the others connect

I'd guess the 2 on either side of the fuel line are the vents. Usually, there are a coupe of vent tees between the 1-2 & 3-4 carburetors and they are higher up on the carb bodies than the fuel fittings.

If the bike has a vacuum petcock, then there should be a vac line connected to the petcock vac port & to a vac port on one of the carbs - usually #2.
