Guessing this is not stock and if so, why would the PO do it.
The bike runs great so no causing an issue, I'm just curious and want to bring back to stock.

It's common for one petcock outlet nipple to be capped off when replacing the stock dual hose carbs with single hose carbs such as smoothbores for example.

Thanks for the info. So, sounds like I may not have stock carbs, would not surprise me. Smoothbores would be sweet! The bike is very fast! Seems much faster than my Honda CB836 [750 bored out]

Appears that the stock carbs for Z1's and KZ900 have dual fuel hoses.

Z1 Enterprises shows what I am talking about on their LH picture of the 29mm Smoothbore carbs. Thats how I could tell if the KZ had 29mm Smoothbores on it!!!!

The number 1 carb states MIC, I know that is Mikuni. What are these??

Guessing the carbs at hand are 26mm from '77 or '78 KZ1000, evidenced by having bottom-located pilot mixture screws.
The '76 KZ900 also has 26mm, but with side-located pilot air screws.
The '78 and '79 KZ1000 cafe racers, and '79 KZ1000 Mark II, have 28mm with side-located pilot air screws.
