You want to make a 180 degree crank for the 750 twin? Why? The 360 crank motor already has the balancing hardware in it, and it's so much smoother than a 180 twin.
If you want to use a single carb, then you are much better off keeping it a 360 crank (as it is stock). You'll never get equal charge to both cylinders if it is a 180 crank with single carb.

In a KZ750 4 stroke 360 degree twin the crankshaft throws are side by side and the pistons rise and fall together. The #1 cylinder fires and after the crankshaft has spun 360* the #2 cylinder fires. So as each cylinder fires the opposite cylinder is at the end of its exhaust stroke with its piston at the top of the cylinder. If you were to assume the position of the crankshaft to be at 0* when #1 fires it will be at 720* when #1 fires again; and #2 will fire at 360* and at 1080* when it fires again, etc. All power strokes of the 2 cylinders are spaced 360* apart making an even running engine that can be balanced fairly easily.
If the crankshaft is modified so the throws are 180* apart the cylinders will no longer fire 360* apart. Instead, if cylinder #1 fires at crankshaft position 0* #2 will fire at 180*. Then there will be a gap of 540* before #1 fires again and 180* latter #2 will fire. As a result, instead of the pulses being 360*/360*/360*/360* they will be 180*/540*/180*/540*. This makes trying to balance the engine rather difficult if not impossible. Harley has been struggling for years with very limited success trying to smooth out their engines because they are not phased 360* because their V-twin cylinders are spaced 45*.
The KZ750 twin has a separate balancer built in to help dampen vibration. This balancer is made to dampen pulses that are 360* apart. It will not work properly, and may in fact worsen vibration, if the pulses are set so the first pulse is 180* and the second pulse is 540* apart.
Because of the above issues, I believe you will not be able to successfully complete your project. Is it fair to ask what you believe the advantage of such a configuration will be? But despite my reasoning above, please don’t let my doubts discourage you as it will be interesting to see what challenges you encounter and how you address them. Ed

Just one (or two) more little problems to overcome.
