Were can you find what kind of Carb it is?

I believe the 26 indicates 26 millimeters across the inside diameter of the carb on the engine side.

You won't find VM26 stamped on the carbs. There are other numbers though and you can cross reference those to the type of carbs you have. Easiest though (as already mentioned) is to measure the ID of the engine side of the carbs.

VM is a Mikuni series of carburetors where the slides are round and mechanical. The 26 is, as has been pointed out, the inner diameter size of venturi which seats in your intake manifolds. It will actually read about 26.7mm if you measure with a caliper. The 1978 KZ1000 family came with standard VM26 carburetors while the Z1R came with similar but larger VM28 carburetors. There is an ID mark on the flange of your assembly that is used by the manufacturer to identify it. On some, there are different marks on each end but only one identifies the assembly. The other is used to ID that particular carburetor as each carb has a mark as well in the same location. To read an ID mark, clean the area good as they are typically shallow and hard to read. Yours will read as follows:
