The reason is because there is not much out there that will work any better with a stock motor. I have a set of BS34s on a GPz1150 that is pushing buck-1/4 in HP and they work beautifully. second thing is that most other carbs are set up for two cables, even though as long as they have a return spring on them they will work just fine with a single cable. If you absolutely require a choice of alternate carbs than a set of VM29s would be the best choice. You will not find a set of new ones because they have not been made for a couple decades but a used set can go between about $700-$1200 if you can find them. Once you build your motor a bit more than a set of VM33s or a set of flatslides would be usable. The VM33s are a good set of carbs on engines 1075 or larger.
I just did some small mods on my BS34s when I put them on my 1150 motor. Because BS34s are venturi carbs, they flow as well as a set of 31.5mm smoothbores would but they draw better. If you are not drag-racing than there is not a much better carb than the BS34. The nice part about them is that they can be set up for either economy or speed, which ever way you prefer. Here is a picture of my setup on my 1150 motor with .420 lift cams, ported head, oversize valves, 11.25:1 compression ++++++. Here is the link to the thread.
