i sent my bike to get the carbs synced and the guy is freaking out because the accelerator pump is not hooked up but they ran great as a gravity feed before will i get better performance with this hooked up or should i just take it to another guy

Sounds like he really doesn't understand how the accelerator pump works on those carbs.
It's not a pump to pump the fuel from your tank, rather a pump that delivers an extra squirt of raw gas into each carb venturi when you whack the throttle open.
And yes, it's very possible for a bike to run just fine with the accelerator pump disconnected. I think you would have to compensate for a little leaness, but will still work.
If you get the pump hooked up it's best to check out the diaphram and make sure it's pumping correctly. A properly working set of pumper carbs perform nicely.
