How does on adjust idle on a '79 KZ1000? I'm used to a thumbwheel style adjuster but can't seem to find one.

On your model I believe there is a thumbwheel, just that it is located behind, and atop the carb rack in the middle.

well I looked for it and only thing I can think of is it's part of the throttle cable. also I found a lever on the bottom side of the carbs that's has a spring to return it to the regular position. Any idea what this is?

This is the diagram for a 1978 KZ1000 A3/A3A as found on Kawasaki.com. See item 23. Find this and you have found your idle adjustment.

Best of success, :)

Thumb screw for idle adjustment is found between middle pair of overflow tubes where they attach to the float bowl nipples.

Good Fortune! :)
