Man, I'm sounding like such a noob but what is the knob at the bottom in the middle of the carbs?

OH yeah! I needed that.

You are a noob. But its ok.

The big thumb sized screw sticking out of the middle of the carb rack is the idle control/adjuster. Clockwise to increase idle/counter to drop idle.

82 KZ1000J, having all these problems with it hoping you ol kaw vets can help me out here an there. Notice all the dern carb questions I've thrown out there in the past 24hrs.

As suggested by TeK9iNe, in signature after "Hooah?" could add 82 KZ1000J which would then appear in each post and likely result in better responses.
