GPz to ZRX carbs

Does anybody know if the GPz 1100 (early 80s version) and the ZRX 1100 have the same carb spacing?

no they don't.

can an 81 gpz1100 be converted to carb? if so how? some guy is selling one for 200 bucks, its fairly clean and runs just some tiny issues

yes it can.
use bs 34's and block injector ports with bolts,
iv'e done the same on my motor.

Another issue you will address if you convert to carbs (particularly BS34's) is that the stock petcock on a stock KZ1100B1 tank will have to be relocated/replaced as the original FI occupies less space than do the replacement carbs. The stock petcock will not clear the carbs. Additionally, the opening for the pressure relief valve on the underside of the fuel tank (necessary for the FI to function) will have to be capped.
