I have never attempted a rebuild so I am not really sure which type of kit to buy, any input would be greatly appreciated (what would be a good price and what to look for), I have noticed some with more parts than others (jets and gaskets) which one would be the better option? some brands of jets are known for being inaccurate im sure someone will post which ones to watch for

Certain types of pilot jets do NOT meter fuel properly. It may be that they are cast wrong or the countersink on one or both ends is not right but they just don't flow right. I have NEVER gotten these type of pilot jets to allow a bike to idle properly. I won't mention brands as there are folks who sell this stuff who sometimes look in on this board and I have no wish to rile my fellow professionals but it is always a safe bet to buy genuine Mikuni pilot and main jets to augment what you find in rebuild kits. Not all rebuild kits will have these problems but some might...

I would just send the carbs to Wired George!!!
I know it is fun to rebuild everything yourself, but carbs can be a real pain. Let a pro do it.

As I mentioned in our offline communication, I think your carburetors are BS34 with the same spacing as is on earlier KZ750s as well as many other models such as KZ1000P, KZ1000J etc. The main jets should be #110, the pilots BS30/94 style and #37.5 size and the jet needle 4BC6 with only one slot. Not sure how to interpret your question regarding other info sources. There may be a Clymers manual for your bike and buykawasaki.com does have parts diagrams but these don't specifically name carb assembly types, manufacturers, etc.
