As it reads in the subject line,

1)What are the differences in VM, BS,CV carbs? (I am pretty sure CV stands for constant velocity, but why and how do they work?)

2)What bikes did these carbs come on?

3)How can you tell which carbs are on your bike?

For example: KZ 650, KZ 1000

vm carb's are mechaniclly controled round slide carbs, bs carb's are c.v (constant velocity) they operate in the difference in air pressure from inside the venturi(throat of the carb)to atmospheric pressure in the chamber below the diaphram.80 was the last year for the vm carbs on our big kz's 81 and up had c.v carbs cv carbs also have a throttle plate that controls the the air velocity going thru the venturi. vm carb's are phisically quite a bit smaller in size than c.v carbs the vm use a narrow 3 screw cap on the top the cv carb uses a square 4 screw cap on the top.
