What carbs and where to get them

OK Folks, here is the plan
810cc wiseco
GPZ 750 Head+Cams
Shave 0.020-0.025" off head
93 octane gas w/ 10% ethanol
Oil Cooler from 1200 Bandit
4-1 ex
Pods
So... I want smooth power (particularly for around town) and "good" gas mileage. I know that this setup will leave me a bit anemic on the low-mid range, but I don't care, I'll shift it down .
I'm thinking of some CV carbs, but what size? What other carb setups should I look into?
Most importantly, where can I buy these items?
P.S. I have 38mm Keihen CV carbs from a 98 Bandit 1200 lying around not sure if anyone wants a trade or if I should go ahead and install them cuz' I have them anyway.

Ok so BS34's, VM26/28's, and flatslides from a newer bike too right?
Should I try to go for some carbs off a newer high perf 600cc bike? Or should I look into the carbs from a 900cc sportbike?
...Or would the "sport cruiser" category fit me best, perhaps in the 750cc engine range?
