I'm getting ready to pull the head off.  What is the benefit of me sending my head off for a valve job versus me just doing the valve seals?

It all depends on the condition of the valve seats.
They may just need a light lapping or a total recut.
Just be aware of the sizes of the shims installed.
Any re-cutting will reduce the valve clearance and you will require thinner shims and possibly the valve stems tipping.
Worst case is you can run out of adjustment and shim choice and you are looking at new valves/bigger valves, new seats or trimming the retainers and collets.
If the head does require more than light clean up make sure the shop you send it to knows what they are doing.

I placed the engine at Top dead center, took off the cylinder head cover and noticed that the cams looked like they are backwards.  Shouldn't the arrows be pointing towards the intake and the exhaust and not towards each other?

Give the crank another 360 turn and the cams will be pointing the correct way.
