I finally found someone to repair my 305's head gasket but he wants me to order all needed parts. What do I need, other than the head gasket??

Buy yourself a top end gasket set.
It should include all you need including exhaust gaskets and the valve stem seals if needed which are worth replacing whilst the head is off.

No eBay APP ID and/or Cert ID defined in Kunena configurationAt first I thought you meant "high quality" by top end but I realize you just mean top end of the engine. But it begs the question, are all gasket sets created equal? I see Vesrah, Athena and this no-name "aftermarket" brand

Go for the higher quality Vesrah / Athena ones and steer clear of anything no name.

I have used Vesrah, which I think are very good, but for a head gasket I would go with OEM.  The problem is that they are hellishly expensive.

I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

In the longe run you save money and time using OEM parts in general?

1981 KZ650-D4, with 1981 z750L engine (Wiensco 810 big bore).

Vesrah is about the best you can get short of OEM.

Vesrah gasket kit has been ordered. Now what about valve stem seals? Any to stay away from or look for, if I can't find OEM?

Also this will be done by a guy who is not a classic bike expert. Anything about these old bikes I should warn him about, or that I should be prepared for him to screw up?

When pulling the head the cylinder should be removed so the base gasket can be replaced too.  And some people like to replace the rings at the same time.  Guess that last part depends on the overall condition and wear on the bike...and the cost of the rings.
