Cutting the exhaust as shown in your picture will kill performance. Ed

For an exhaust to be effective it needs to flow - that means during an exhaust stroke the gasses will be drawn out by the movement of the exhaust gasses from the previous stroke. Too short and there won't be any flow, it will just be blowing exhaust into slow moving air each time. Longer pipes with no restrictions (baffles) is the way to go for performance. If you use a resonator instead of a baffled muffler you can get good performance without being too loud.

Any major change to the exhaust will likely require the carbs to be re-jetted.

Judging by his build I would say he really doesn't care about the performance, it's about style

Rejetting is already anticipating and as far as exhaust goes stock pipes will bottom out on ground. Any suggestions on possible pipe routes appeciated

I've seen where guys chop off the stock mufflers just aft of the footpegs and graft/weld on some smallish harley bullet mufflers instead. That setup would be a good way to go. Photo below for reference...

Couple thoughts
1) The focus isn't working on the potato you are using to take pictures
2) Isn't that going to burn the crap out of your foot and calf, having the exhaust dumping in front of the foot peg?

Rejetting will not bring back power lost due to a poorly designed exhaust. Don't know what carbs you have but if their CV carbs it will never run right with the exhaust you have planned. Not trying to rain on your parade just telling you based on my experiences in building bikes.
