They said not manufactured to the exact specifications of the day. Does that mean there will be no babbitt bearings just the cams riding on milled journals? If so, not interested.

Not the whole bike, but from that page Kawasaki is considering making other parts:
Furthermore, KHI will examine the possibilities of reproducing parts other than the cylinder heads, as well as out-of-stock parts of other historical models, taking into account customer feedback on this reproduction project. >>> spread the word.

Oh man, some 550D1 pistons and rings would be awesome. Or even just complete sets of rings ... and factory head gaskets while they're at it.

Im dreaming about crate motors ready to plug into our bikes.
Even better would be crate motors available with various levels of extra power like chevy does in there factory motors

I hope Kawasaki is smart enough to use a 8mm exhaust stud instead of that skinny 6mm exhaust stud of the Z1 heads.

Yes, they mentioned the 8mm studs in their announcement. But I've never had a problem with the 6 mm studs, although I once broke a retaining ring tightening the stud nuts....was my fault...one of the exhaust rings was overlapping the other one.

I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

That's pretty amazing. Does anyone know of any other example where a motorcycle company made or makes factory reproductions of complex parts like this?

I love that the Z1 900 wasn't even sold in Japan, due to the cc limit, and yet they are so popular there that they convinced the factory to manufacture new cylinder heads for a 45 year old bike.
