Throttle issue was created by T0ink
I got my bike out finally, new tires, made sure the carbs were clean, lubed her up, all set to go! Get on her to top off the tank, and I notice that when I i let off the throttle it kind of... Lags? Lurches? It feels like when you downshift. Doesn't matter how fast I'm going, 20 around the block, or 60 on the highway, if I ease or let go of the throttle. Any suggestions?

2nd on Patton's suggestion of air leaks in the card holders. You said made sure the carbs were clean. If you removed them for the cleaning that's even more reason to suspect a bad seal at the holder. A common trouble shooting technique is to spray WD-40, propane or starter fluid at the carb/mount junction. If the RPM's change (up or down depending upon what you use), you've got a air leak. If your holders are original, they're probably hard and due for replacement anyway.
