Valve gap still not in spec after shim swap

I have a huge collection of wood screws, but only two sizes, too long and too short. I go to the store and buy the right ones, keep the left overs safely for a future project, but it's still the same next time, they are all either too long or too short, so of to the hardware store I go again.
