Well I never turned a wrench on a bike until I got my 76. I managed to check and change shims without hurting myself or the bike. Only tool I had to buy was a in/lb torque wrench.
Hope OMR's links get you the FSM you need. Had to look up A&P mechanic to see what it was.

Glad you were able to get the manuals.... B)

From your original post, something missing here or maybe I just miss read  is the extremely low coil voltages @ 10.5Vdc.... Possibly low battery voltage where requires charging.

Same time, while idling should be ~ 13Vdc, @ 3500 + rpm should be up to ~ 14.5Vdc.

If she's not properly charging and truly only have ~10-11Vdc then she will run rough with out a doubt. Basically, that's ~ 1/3rd missing spark energy off the plugs. Thus she's not fully burning the fuel in the compression chamber & most likely running extremely rich.... Plugs all carbon?

Your manual will have a procedure for Dynamo/Rectifier/Regulator testing & measurements. Insure the frame/engine is ideally grounded for the Dyna plate requires grounding.

Also, using Dyna coils...? If so, did you insulate the mounting posts...?
With these coils, the +12Vdc posts can arch to the mounting post/grounded frame robbing your coil voltage... ;)

Should be similar to this one the Z1/KZ9000/ 77-80KZ100
