Let's assume your bike is stock and running properly. If you get a good launch and shift correctly you should be happy getting into the mid thirteens in the 1/4, but there are so many variables, bike upgrades, rider experience and physical size, it is hard to predict.
If you are running in the 1/8 be happy if you are solidly in the 9 second range.
When we read what these bikes ran when they were brand new, the numbers were usually laid down by a factory racer or bike that was specifically tweaked for the test. It would be almost impossible to duplicate the 13 flat 1/4 that Pee Wee Gleason (a 140 lb pro rider) ran on the stock Kz650 back in 1977. Your 750 wasn't substantially more powerful than the 650 so you can use this as a baseline.

Hey bigphil -Judging from your username I take it you are not a lightweight:)

Back when my 77 was young the best I could get was 13.50's. Hopping up the motor took almost 1 1/2 seconds off the ET's though.

By my own admission, my reaction time and launches weren't as good as they should have been. In hindsight I should came off a little higher than the 3500 rpm's that I launched with. I was shifting around 11 grand and the bike was still pulling.
My times for the 1/8 were around 8.90 seconds with a flat spot at 6-7000 on every shift.
With the new Mikuni 29 smoothbores from WG, another tooth off the front sprocket and a little harder launch I am hoping to crack into the 7's this year.

My favorite race was up against a ratty-looking Kawasaki 500 triple that had all the money into the motor and none into the paint job or cleaning solvents but the old 2 stroker almost caught me at line. Afterwards he asked me how I made the 650 run so hard. I just smiled and said I just put in new plugs and neglected to mention the big-bore kit:)
