A vent will help fight humidity buildup in summer, but that is not much of a concern in winter. The real problem is condensation. Condensation drips and forms pools of water in crevices. To fight condensation, you are better off with the shack sealed to limit the speed with which warm moist air can get in after a cold day or night. By slowing the air exchange, it gives the bike time to come up to temperature to prevent condensation forming.
Once the bike is near the outside temperature, condensation won't form.
To prevent it, you only need to keep the bike a couple degrees above the outside temperature. A work light pointed at the motor would probably do it.

You may want to consider placing a "Goldenrod" under the bike to keep the temperature of the bike and surrounding area slightly above the ambient air temperature. I use two short ones in my gun safe to prevent possible rust or corrosion. They come in different lengths, so maybe a long one would be a good choice. They only draw about 38 watts, and they run at about 150 degree F. They have no moving parts and make no noise. They are sold on Amazon and a million other places. The link below gives a description.
