I have several restored bikes along with a 2006 Goldwing with a sidecar. My wife has a 2019 Suzuki DR 650 for on and off road.

I really enjoy my Goldwing for storage. I have much more than a normal one because of the sidecar.
Kawasaki made the Concours, but I think the bags are integrated into the frame.
Check out the Honda Pacific Coast....a very interesting machine. I've seen a couple for sale locally and thought about buying one but haven't pulled the trigger.

I have a first generation 94' Concours and it's an awesome touring bike. The bags are removable and decent size. They handle great, I can almost drag the bags on mine. The Concours bodywork is pretty easy to remove for maintenance. They have a 7.5 gallon tank for great range. I've done a lot of long distance rides on my Concours and I won't get rid of it.
Don't get a Honda Pacific Coast. They are underpowered and have so much plastic on them it's a nightmare to work on. I swore to never work on one again.

The Honda PC has a cult following of sorts. I had considered one years ago for commuting to work as it has great storage. I found one for cheap locally on Craigslist but upon test riding it I found it bulky and it couldn’t get out of its own way. I was stunned at how slow.
And as mentioned it’s one giant bloated ball of plastic.

I had a 1994 Concours that I put over 60,000 miles on (just broken in). Loved it. Seat was a little sucky so I rarely made more than 500 miles in a single day. The later ones had a better seat. The current generation is a velvet rocket.
