I believe Works will sell you one for ~$600, and HPU (Horsepower Unlimited) I think is still selling modified GSXR shocks for near the same price.
Check the forums at www.750turbo.com as there is quite a bit of GPz750 info available there.

The GPz shock is quite short, around 300mm, most modern shocks are about an inch longer so finding a new replacement isn't easy. Most turbo owners go for a ZR7, Thunderace or Fox shock off ebay. The only NEW shock I know of in the UK is a Hagon. Whatever you get it's fairly safe to say it will be better than the original....

If you go with a bit longer shock, couldnt you just get longer "dog bones" to compensate the higher ride height?

You can, but
1) The dog bones on the GPz aren't straight, they are dog leg shaped and have heim bearings at one end. To reproduce them in a different length would be expensive
2) Altering the angle of the bottom suspension rocker by using a longer shock can drastically affect the ride, you may find your new shock no longer has the right spring rate or damping characteristics.
Having said that, I'm just about to do something similar myself as an experiment, as I need a lower profile rocker to get some more ground clearance. The ZZR11 (ZX11) has just such a rocker.

84 GPZ750. Modded with stock Kawasaki parts: ZR-7 shock, ZX-6 coils, GPZ1100 throttle, EN454 brake, GPZ900 fuse box, etc. and non stock: Ken Sears mirrors, K&N filter, Pirelli Sport Demons.

I have had my zr7 shock on for about a month now, amazing the difference.
You do have to do a couple of mods 1) make a 12mm to 10mm spacer for the top bolt, and 2) add some washers for the bottom bolt, but is not hard to do.
Well worth my $15, but I got a steal of a deal.
