There's plenty of overlap - google "cafe scrambler -ducati" to see examples. A cafe racer isn't a MotoGP bike and a scrambler isn't a dirtbike; they're both often made from the same type of base and differ by really only a few details. If you just want to go as fast as possible, buy a crotch rocket, and if you just want offroad capability, buy a plastic-clad dirtbike. You build a custom because you want something different than what's out there. Go for it.
